About the Event

Here our recommendations for wine pairing from our Sommelier:

Aperitif /  Sparkling

Albino Armani Prosecco D.O.C.                            Price cca.  CZK 350 

or CUVEE’PRESTIGE DOCG Ca’del Bosco          Price cca. CZK 1250 (can be ordered from Matteo)

Sommelier notes:You should always cook with a glass in your hand! ; )  Therefore a start with "bollicine" is not only a good way to build your appetite but also to get you in the mood for a great meal Hint:  If you select the Ca'del Bosco to start... you can just keep on going with that into the first course (and possibly even into the second) as the Chardonnay base of that sparkling wine will still work very well with the soup / scallops and salmon ; ) _____________________________________________________________________________________________

First course /

Coltorenzio, Chardonnay Altkirch DOC, Alto Adige                 Price cca.  CZK   400 (can be ordered from Matteo)

or St. Michael-Eppan, St. Valentin, Chardonnay, Alto Adige    Price cca.  CZK 1150  (can be ordered from Matteo)

Sommelier notes:The creaminess of the butternut squash soup with the pan seared scallops will be perfectly complemented by the "butteryness" and roundness of a Chardonnay.  If you can't source either of the above, suggest going with any other Chardonnay, although try to ensure its not too "oaky" (eg. A white Burgundy would be perfect).  If you want a new world alternative, a Semillion from Australia's Hunter valley would be marvelous or indeed a Viognier from California.Hint: Try to avoid any fresh or "acidic" young white varietals such as Sauvignon Blanc or Pinot Grigio as they will clash with the smoothness of the soup and scallops.


Second course / WHITE: 

Cordero di Montezemolo,  Arneis Langhe, Piemonte                    Price cca. CZK   725 (can be ordered from Matteo)

or Donna Franca - Ansaldi, Bianco di Abbadessa, Sicilia              Price cca.  CZK 1250 (can be ordered from Matteo)

Sommelier notes:The Arneis varietal is perhaps not one which many people are familiar with, nevertheless it is a lovely floral-scented wine, with a delicate aroma but with nevertheless a relatively full body.   It will feature pear and apricot notes with a creamy hint of hazelnut.The Donna Franca is a Sicilian white which has a reputation for producing smooth, yet bold wines, owing to the copious amount of sunshine which the island collects!Either wine will complement the oilyness of the salmon and the creamy sauce of this dish. Hint: The St. Valentin, Chardonnay from the first course will still work very well for the second. If you haven't quaffed if already before you got to the main dish!  ; ) 

Second course / RED: Massimago Valpolicella DOC, Veneto        Price cca.  CZK 400 

or St. Michael-Eppan, St. Valentin, Pinot Nero, Alto Adige            Price cca.  CZK 1695 (can be ordered from Matteo)

Sommelier notes: Believe it or not, light red wines can also work with fish and seafood dishes quite well.  So if you're not a white wine drinker, do not despair, we have thought of you also!  Both the Pinot Noir and the Valpolicella are relatively light red wines, so will not overpower the salmon, on the contrary, they should complement its seared, steak like nature. Hint: Keep the Pinot Noir in the fridge and take it out about 15 mins before you start eating.  The chilled wine should further moderate and soften its aroma and be softer on the palette.
