Sommelier notes:

This week's menu provides a potentially easy wine selection, as both courses would be complemented well by a "soft" and "round" white wine, therefore once you select a wine for the starter, you should be able to continue with that same bottle, or indeed bottles ; ) all the way through to the end.

The "butteryness" of a nice (preferably aged) Chardonnay will complement the potato soup and the subtle oakyness should also reflect the earthy wild mushrooms which will come through boldly in the soup.  A Chardonnay will seamlessly flow into the second course salmon dish.  Either of the above Chardonnays will work very well, however, if you're after a geographical pairing... I strongly suggest you try the Falaghina which is from Campania, what better way of experiencing the Southern Italian province than through its food and wine, it's almost like being there! ; )

If you can't manage an Italian wine, a nice white Burgundy (eg. Montrachet) will do wonderfully well... if you can afford one ; )

Try to avoid any fresh or "acidic" young white varietals such as Sauvignon Blanc or Pinot Grigio as they will clash with the smoothness of the soup and the oilyness of the salmnon.

If you prefer a Red wine with your main, I'd recommend selecting a "light" red varietal, such as a Pinot Noir, a Valpolicella (a Classico not a Ripasso as that will be too heavy), or even a Beaujolais!  Beaujolais Nouveau release is only a week away!... but any lighter reds will complement the steak like nature of the salmon with the sharpish tomato based guazzeto!
